1) Histological studies were preliminarily performed on young legumes of the kidney beans (Phaseolus vulgaris L.,) to have foundamental data for the further studies on the effects of freezing and thawing on the beans. 2) Pod of the young bean consists of three layers, i. e., epicarp, mesocarp and endocarp, each of which consists of multiple layers of cells and contains starch and is rich in ascorbic acid. 3) Cotyledons stores starch granules, which have been deposited in amyloplasts, and cytochemical test for ascrobic acid is positive with the cotyledons. 4) Chemical determination of ascorbic acid showed 14.7 mg% to 17.8 mg% in young legumes of the kidney beans. |
