In this study, chicken, pork and beef meat that were sold at supermarkets in Hiroshima-city in 1987 were tested bacteriologically. As the sesult of the test, the count of living bacteria per gram in chicken was from 6.0×10^4 to 3,100×10^5 , pork from 5.0×10^4 to 140×10^5, and beef from 3.4×10^4 to 18×10^5, hence chicken comes first, and pork second, and beef third in number. Furthermore, salmonella sp were found only in one sample among the 16 chicken-samples used in this test, hence the positive rate in the test was 6.3%. |
