The present paper deal with the development of useful and reliable methods for the potential utilization of the red algae for the future. Concerning the Porphyra pseudolinearis UEDA (Uppurui-nori), the following descripion is quoted from a feudal-age document in the archives of Hirata city: "Long time ago the Uppurui-nori was produced solely for the presentation to the feudal lord and no sale had been made. But later people were allowed to sell it." "People had to produce the Uppurui-nori under the superintendence of the retainers in charge and were not allowed to sell it until they finished the presentation to the feudal lord. Furthermore the substandard nori was packed to take it to the feudal lord. " Thus the above description tells us that the feudal lord contributed the nori to his retainers, and then to his people, to celebrate the special occasions like the New Year's Day or festevals with the special food, the Uppurui-nori. Since then such traditional eating have been strictly respected by the people in the Izumo area. And the Uppurui-nori should be understood as a very nature-made food to the people who respect the traditions and the religion in their lives. |
