Summary
To understand evaluation of our school cafeteria by actual and potential users and, based on the findings, improve its management, interviews were conducted with cafeteria operators and a questionnaire was carried out with students and teachers, collecting ₈₂₁ responses.
According to the questionnaire, ₂₃.₅% of the respondents were actual users of the cafeteria. Meals were evaluated favorably, while their prices were conceived to be relatively high. Good taste, reasonable prices, and satisfactory serving quantities were considered important with regard to on-campus lunch. Nutritionally balanced meals priced around ₄₀₀ yens were most demanded. Many of the respondents also demanded that desserts be served at the cafeteria. This indicated that the school cafeteria was not simply for eating but played an important role in the communication among peer students. Hopefully, using the result of the questionnaire, the cafeteria menu will be changed to attract more user attention.
The questionnaire also showed that ₆₂% of the respondents did not consider nutrition or health when choosing their lunch, evidently indicating their poor dietary knowledge. To address this issue, the dietary education needs to be promoted for students.
