Abstract

The purpose of this study was to examine the effects of pleasantness / unpleasantness and ediblity upon the configurational and nonconfiguratinal interaction between odorants in binary mixtures. Presented odor stimuli were 8 kinds of odorants which were defined by 4 categories between pleasantness and ediblity. In addition to these stimuli,10 kinds of their binary mixtures were also presented. Forty one participants rated the impressions of each odor. The classification of 18 odors based cluster analysis indicates the factor of pleasantness with high ediblity influenced the impression of mixture odors strongly. Moreover,rank correlation analysis of impression scores between constitute odors and mixture odors reveals the impressions of mixture odor constituted by the odors from different categories were controlled by dominant constitute odor. These findings implied cognitive categories influenced the impressions of mixture odors and top-down process related in binary configuration for odors.
