The relationship between aluminum accumulated in the brain that has been absorbed through the intake of food and acknowledgment of the resulting syndrome has been reported. Though there are differences in the levels of concentration, aluminum is included in food and
intake or ingestion of eluted aluminum from aluminum tableware of food containers is a situation that cannot be avoided.
The possibility of removing aluminum from the body is being considered, because the alginate, a kind of seaweed polysaccharide which is found in large quantities in the combu fronds of brwon alga, has the characteristic of combining with aluminum by the process of an ion exchange reaction allowing it to be discharged as waste from the body. By processing and cooking combu fronds, a kind of seaweed polysaccharide, a low molecular weight of alginate is generated. It is predictable that generating a low molecular weight in such a
process will influence the ion exchange. This study was conducted to review the influence on biding capacity through differences in concentration, reaction time, and the reaction temperature of aluminum nitrate and aluminum lactate using low molecular weight (Na-Alg) sodium alginate by the AOAC method. The influence on reaction time at 0.1 M aluminum solution of Aluminum nitrate showed a binding rate of about 90% in 60 minutes. Aluminum lactate showed a binding rate of about 75% in 90 minutes. The influence of reaction temperature on both aluminum solutions showed a binding rate of 90% to
100% at 70°C.Considering the influence of concentration on the aluminum solution, aluminum nitrate showed a binding rate of 80% at 0.02 M and aluminum lactate showed a binding rate of 60% at 0.05 M.
