This study aimed to elucidate how the day-to-day activities of nutrition teachers - or more fundamentally,their presence - influence the dietary habits of children and parents through analysis of the“ Dietary Habit Survey ”conducted by the Hiroshima Prefectural Board of Education. The results showed that the percentage of affirmative answers was significantly higher in children attending schools with nutrition teachers with regard to the following questions:“ Do you have a balanced breakfast that has grains, main dish, and vegetables?”;“ Do you help prepare and clean up after meals?”;“ Do you cook with family or on your own at home?”;“ Do you know of any foods from Hiroshima?”; and“ Do you know of any local dishes from Hiroshima?”. The percentage of affirmative answers was significantly higher in parents of children attending such schools with regard to the following questions:“ Do you keep nutritional balance in mind when preparing meals?”;“ Do you and your children talk about school lunch menus at home?”; and“ Do your children talk about things they learned regarding healthy diets, for example, consuming vegetables?” These results indicated that the presence of nutrition teachers and their day-to-day activities are effective for children and parents, particularly as it influences hard-to-change dietary habits such as including grains,main dishes, and vegetables for breakfast as well as helping with chores and cooking at home. |
