Abstract |
We conducted an analysis of“ Dietary Habit Survey in 2020” and“ Dietary Education Implementation Survey in 2019” with the aim of clarifying children’s thoughts on school lunchtime with coronavirus disease 2019 (COVID-19) countermeasures and associations with dietary education provided by nutrition teachers. As a result,“ eat”,“ talk”,“ silence”,“ quiet”,“school lunch”,“ fun”,“ turn face”, and“ corona” were extracted as frequent words used in the responses to the item,“ What I felt and noticed about the way I was spending school lunchtime” in nutrition teacher arrangement and non-arrangement groups. The characteristic words of the nutrition teacher arrangement group were“ school lunch”,“ fun”,“ group desk”,“front facing”, and“ delicious”, while those of the nutrition teacher non-arrangement group were“ eat”,“ silence”,“ talk”,“ quiet”, and“ mask”. In a co-occurrent network diagram,“ talk”,“silence”, and“ quiet” co-occurred with“ eat” in both the nutrition teacher arrangement and non-arrangement groups, and the centrality of“ eat” was high in the nutrition teacher arrangement group. In addition,“ school lunch” co-occurred with“ eat”,“ silence”, and“ quiet” in the nutrition teacher arrangement group only;“ fun” and“ delicious” also co-occurred, and the centrality of“ school lunch” was high. From among the selective answers, regarding“ I value my food and try to eat it all”, the proportion of“ it is well applied” was higher in the arrangement than in the non-arrangement group. Also, regarding school lunchtime in the arrangement group, guidance on dietary education was provided for“ enjoying meals”,“ ways to eat a healthy diet”,“ diet and culture”, and“ labor and gratitude”. These results indicate that during school lunchtime with COVID-19 countermeasures, children in the nutrition teacher arrangement group had strong thoughts toward school lunchtime up to the previous fiscal year and accepted the situation in which infection risks were considered. Among the guidance carried out by nutrition teachers during school lunchtime up to the previous fiscal year, guidance on“ enjoying meals”,“ diet and culture”, and“ labor and gratitude” unconsciously encouraged comparisons of school lunchtime between the previous and current fiscal years, suggesting that school lunchtime with COVID-19 countermeasures provided an opportunity to confirm and establish the ideal way to enjoy school lunchtime, the necessary etiquette, and feelings of gratitude toward people and the blessings of nature. |
