Description

Pastes, which are the modified diet for dysphagic individuals, possess a definite grain content that may lend it an inhomogeneous character. This grain content of paste is difficult to determine. In our study, we investigated the grain content of inhomogeneous paste by sensory evaluation. Paste with a grain content of <1.0% was considered homogeneous, while that with a grain content of> 10.0% was considered inhomogeneous and needed to be masticated. Additionally, we developed a reliable method to determine the grain content of paste.
